Devil's Food Cake with Melinda

We chat with Melinda about a childhood recipe that sounds a little wicked and the secret a beloved grandmother used to make her famous Christmas fruit cake.





 

Devil's Food Cake recipe





Ingredients


1 cup undiluted Carnation milk

1 tbsp brown vinegar

1 ½ cups plain flour

½ cup cocoa

1 pinch salt

1 ½ tsps bicarbonate soda

1 ¾ cups sugar

⅔ cup melted butter

2 eggs

1 tsp vanilla extract



Method


Preheat oven to 165°C Grease the pan. Add vinegar to carnation milk and allow to stand to sour it.


Sift flour, salt, cocoa, bicarb soda and sugar all into large bowl.


Pour in melted butter and half of the carnation milk.


Beat well for 2 minutes.


Add eggs and vanilla and remainder of carnation milk and beat for another 2 minutes.


Pour into the prepared pan.


Bake approximately 45-50 minutes.


Allow to cool slightly before removing from the pan.


Ice cake when cool.
