White chocolate mud cakes
We chat with Rachel about a sweet treat that’s universally loved. It’s a recipe that started in a family kitchen, was used to create a wedding cake and has played a part in a career change.
White chocolate mud cake recipe
Ingredients
180g white choc
350g unsalted butter
2 2/3 cup castor sugar
1 1/2 cups milk
2 cups plain flour
2/3 cup self raising flour
1 teaspoon vanilla extract
3 eggs
Method
Combine chocolate, butter, sugar and milk in a saucepan and melt together on a low heat until smooth.
Pour into a large bowl.
Cool for 15 minutes.
Whisk in sifted flours, vanilla and eggs.
Spoon into cupcake wrappers and bake in oven at 160° (fan forced) for 20-22 mins.
Top with your favourite butter cream.
